Dom's Spicy Smart Meal

INGREDIENTS

  • 1x Smart Meals Feeding Bag
  • 3 tbsp coconut / vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp black mustard seeds
  • 1 cinnamon stick
  • 1 aniseed star
  • 1 tsp fenugreek
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1.5 tsp garam masala
  • 2-3cm fresh ginger, finely grated
  • 2-3 cloves of garlic, crushed
  • 1 red chilli (deseeded for less heat)
  • 1 large red onion, finely sliced
  • 2 cups baby spinach
  • 250g butternut, cubed
  • 1,25-1.5L stock, mixed with boiling water
  • 500g lamb or chicken or leave out for a veggie option

METHOD

  • Place the butternut cubes into a shallow overproof dish, drizzle with a bit of oil and roast until soft. Once ready, remove from the oven and put to one side.
  • In a large, heavy-based pot or wok, add the coconut / vegetable oil. Once heated, add all the dry and ground spices and the chilli and fry on a medium heat for a few minutes.
  • Add the ginger, garlic and onion and fry until the onion is soft, stirring regularly.
  • Add the cubed lamb / chicken and fry until the piece are browned.
  • Add the Smart Meal contents and stir through so that all the ingredients are well combined.
  • Add 1L of the stock, reduce heat and cover. Stir regularly to avoid catching and add more stock as required until the rice, lentils and dehydrated vegetables are soft.
  • Turn off the heat.
  • Add the baby spinach and stir through.
  • Add the roasted butternut and stir through.
