Nachos Mexicana
INGREDIENTS
- 1x Smart Meals Feeding Bag
- 1x Onion
- 1x Garlic clove (or 1 tsp dried flakes)
- 1x tin Mexican chilli tomatoes
- 1x tin kidney beans (optional)
- 1x tin corn (optional)
- 1x Green pepper (optional)
- 1 or 2 large pkts tortilla chips
- 2 cups cheddar cheese (grated)
- 1 carton sour cream / plain yoghurt
- Guacamole (avo, lemon juice, tobasco, salt&pepper)
- Coriander for garnishing
METHOD
- Begin cooking the SM in a pot with 5 ½ cups of water for 25-30 minutes. Drain if necessary.
- While the SM is cooking, fry the onion and garlic in a separate large pot in a tablespoon of oil until caramelized to your liking.
- Add tins to the pot and the chopped green pepper.
- Add the cooked SM to the mixture. Allow the flavours to develop by simmering for at least ½ an hour. Additional cumin and chilli can be added if a more intense flavour is your preference.
- Spread the tortilla chips in a baking tray and sprinkle the grated cheddar cheese over the top. Grill until the cheese has melted.
- To serve: Taco’s and cheese is the base. Add chilli smart meal mix. Add a tablespoon of sour cream, followed by a tablespoon of guacamole. Finally, add a few leaves of coriander.
